Brought up in Australia, Marie-Françoise Amestoy loves to welcome Anglophones from the other side of the Atlantic, who delight in tasting seafood or, from September onwards, the well renowned Pyrenean suckling lamb ("Axuria" in Basque), much appreciated by meat lovers.
