He selects his seasonal products and prepares them meticulously, allowing them pride of place in generously portioned traditional cuisine dishes. The menu changes every month and the daily blackboard recommends a very appealing lunch offering. Service is both attentive and discreet. The wine list is well-balanced between classics and newly-discovered treasures.
