Hélène remains faithful to the tastes of her native south-west French with good quality, simple and genuine produce. The foie gras and the poultry come from the Landes region, the beef is from Chalosse, the salmon is fished from the river Adour and the milk lamb comes from the Basque country. However, whilst respecting her childhood values, her preparation of this star produce is free-spirited and full of cunning. Her cuisine is a reflection of her passions and reveals great sensitivity.
