Former chef at L’Oustau de Baumanière – humbly but firmly imposing his own style – he operates through what the market has to provide and offers three separate menus, each telling a well-handled story. The floral and vegetal decor epitomizes an urban kind of nature that evolves as seasons change. Well done !
